Ingredients:
· 2 pounds of pork roast
· 1 cup of cilantro, chopped
· 1 cup of white onion, sliced
· 2 chipotles in adobo sauce, chopped
· 2 cans of beer or broth (plus more if needed)
· 2 jalapeños, chopped (remove seeds for less spice)
· 2 oranges, both juice and rinds
· 2 limes, both juice and rinds
· 8 ounces of green chilies
· 6 cloves of garlic, minced
· 1 tbsp of cracked pepper
· 2 tsp cumin
· 1 tsp dried oregano
· 2 tbsp smoked paprika
· Pinch of salt
· ½ tsp red pepper flakes (optional)
Instructions:
1. Mix the pepper, cumin, oregano, salt, and red pepper.
2. Rub the mixture evenly on all sides of the pork roast.
3. Heat stockpot to high and add all remaining ingredients, mixing thoroughly.
4. Add the pork roast to the mixture and cover with a lid. Bring to a boil and reduce heat to low.
5. Allow mixture to simmer for 6-8 hours, checking liquid every 2 hours. Add more beer if needed to top up liquid.
6. After meat is cooked through, remove the pork roast and place in large glass bowl.
7. Shred the meat with two forks, then add the shredded meat back to the liquid and mix.
8. Serve your wild boar barbacoa hot.
